Une plateforme TRS pertinente pour l&rsquo;agro doit int\u00e9grer ces contraintes nativement, sans d\u00e9grader le pilotage de la performance. Cet article documente les exigences IFS Food v8, BRCGS Food v9, HACCP, ISO 22000:2018, et l&rsquo;architecture cible 2026 d&rsquo;une plateforme TRS conforme.<\/p>\n<p>Les bases r\u00e9glementaires s&rsquo;appuient sur IFS Food version 8 (International Featured Standards, 2023), sur BRCGS Food Safety Standard issue 9 (Brand Reputation Compliance Global Standards, 2022), sur les principes HACCP du Codex Alimentarius CAC\/RCP 1-1969 Rev.4 2003, sur la norme ISO 22000:2018 (Food Safety Management Systems), et sur la norme ISO 22400-2:2014 pour les KPIs production. Trois exemples concrets : Nutriset (62 % \u00e0 80 % de TRS en 4 semaines en production RUTF), Hutchinson (40 sites incluant lignes agro), Stellantis (\u20ac4,8 millions pertes annuelles, application transposable agro).<\/p>\n<h2>Le cadre r\u00e9glementaire agroalimentaire applicable au TRS<\/h2>\n<h3>IFS Food v8 (2023)<\/h3>\n<p>Standard international audit\u00e9 par tiers, exig\u00e9 par la grande distribution allemande, fran\u00e7aise, et progressivement europ\u00e9enne. Couvre la s\u00e9curit\u00e9 des aliments, la qualit\u00e9, les processus de production. Sections applicables TRS :<\/p>\n<ul>\n<li><strong>Section 3 (Site standards)<\/strong> : conception et maintenance des \u00e9quipements, contr\u00f4le conformit\u00e9.<\/li>\n<li><strong>Section 4 (Product control)<\/strong> : ma\u00eetrise des mati\u00e8res, allerg\u00e8nes, tra\u00e7abilit\u00e9.<\/li>\n<li><strong>Section 5 (Process control)<\/strong> : ma\u00eetrise des processus, calibration, mesure de performance.<\/li>\n<\/ul>\n<h3>HACCP \u2014 Hazard Analysis Critical Control Points<\/h3>\n<p>M\u00e9thodologie issue de la NASA dans les ann\u00e9es 1960, formalis\u00e9e par le Codex Alimentarius. 7 principes fondamentaux : analyse des dangers, identification CCP, \u00e9tablissement des limites critiques, surveillance, actions correctives, v\u00e9rification, documentation. Toute production agroalimentaire doit appliquer HACCP. La plateforme TRS doit s&rsquo;int\u00e9grer au plan HACCP, notamment pour la surveillance continue des CCP (Critical Control Points) et le d\u00e9clenchement d&rsquo;alertes en cas de d\u00e9viation.<\/p>\n<h3>ISO 22000:2018 (FSMS)<\/h3>\n<p>Norme internationale du management de la s\u00e9curit\u00e9 des aliments. Combine HACCP + management qualit\u00e9 + ma\u00eetrise op\u00e9rationnelle. Structure plus formalis\u00e9e que IFS\/BRCGS, choisie par les groupes internationaux pour harmoniser les pratiques multi-sites.<\/p>\n<h2>Les sp\u00e9cificit\u00e9s TRS en production agroalimentaire<\/h2>\n<h3>Cadences variables par recette<\/h3>\n<p>Une m\u00eame machine peut produire 10-50 recettes diff\u00e9rentes avec des cadences nominales tr\u00e8s distinctes (yaourt nature vs yaourt aux fruits, plat pr\u00e9par\u00e9 simple vs \u00e9labor\u00e9). La cadence nominale TRS doit \u00eatre param\u00e9tr\u00e9e par recette, pas par machine. Cette granularit\u00e9 est critique pour ne pas masquer les pertes de cadence r\u00e9elles.<\/p>\n<h3>Nettoyages CIP\/SIP intercal\u00e9s<\/h3>\n<p>Les nettoyages en place (CIP \u2014 Cleaning In Place) et st\u00e9rilisations en place (SIP \u2014 Sterilization In Place) sont intercal\u00e9s dans la production (typiquement quotidiens, parfois entre chaque changement de recette). Ces temps de nettoyage ne sont pas des d\u00e9faillances mais ne sont pas non plus de la production : leur classification dans le TRS doit \u00eatre explicite (typiquement compt\u00e9s en arr\u00eat planifi\u00e9 hors TRS, ou en \u00ab\u00a0Disponibilit\u00e9 op\u00e9rationnelle\u00a0\u00bb s\u00e9par\u00e9e).<\/p>\n<h3>Tra\u00e7abilit\u00e9 lots et batches<\/h3>\n<p>Comme en pharma (cf. <a href=\"https:\/\/teeptrak.com\/fr\/trs-industrie-pharmaceutique-gmp-2026\/\">TRS industrie pharmaceutique<\/a>), la production agro est structur\u00e9e par lots avec tra\u00e7abilit\u00e9 amont (mati\u00e8res premi\u00e8res, fournisseurs) et aval (clients, dates de p\u00e9remption). La plateforme TRS doit prendre en compte ces contraintes dans le calcul de Disponibilit\u00e9.<\/p>\n<h3>Variabilit\u00e9 mati\u00e8re premi\u00e8re<\/h3>\n<p>Les mati\u00e8res premi\u00e8res agricoles pr\u00e9sentent une variabilit\u00e9 naturelle (taux de mati\u00e8re s\u00e8che, taux de sucre, calibre, qualit\u00e9 saisonni\u00e8re) qui impacte les cadences r\u00e9elles. La cadence nominale TRS doit \u00eatre param\u00e9tr\u00e9e par lot de mati\u00e8re premi\u00e8re pour les productions sensibles, sinon la Performance TRS refl\u00e8te la variabilit\u00e9 mati\u00e8re
